Introduction

Traditional Japanese cuisine doesn t include a great deal of bread which is a shame since this Shun bread knife is a remarkable piece of design. The ultra hard 32 layer Damascus steel gives a supremely sharp edge but the unusual serration pattern makes this knife very special. The teeth in the front half of the knife point forwards while those nearer the handle point backwards. This gives a remarkable cutting performance on both the forward and backward strokes. This knife will cut some of the cleanest slices of bread ever. The lightweight laminated Pakka wood handle is contoured to fit into the right hand while the counterweight at the heel of the knife provides poise and balance.
