The pan is made from carbon steel which will heat your paella consistently and evenly however it will require gentle seasoning before use to prevent the food from sticking. The seasoning will build up over time making the pan look darker but improving its non stick properties. This pan should be gently washed by hand after use and dried thoroughly. The cooking surface should be lightly oiled if you are going to put the pan away for a long period over the winter.
